Braised chicken

卤鸡腿









Ingredients:

4 pieces of chicken drumsticks or thighs

6 cloves of garlic

1 capsicum, cut into small chunks

4 tablespoons of sugar

4 tablespoons of soy sauce

1 tablespoon of dark soy sauce

1 stalk of spring onion, chopped into small pieces 

1 tablespoon of sesame oil

1 bowl of water, or enough to cover the chicken when cooking


Steps:

1. On low heat, pour sugar and garlic into wok and stir until all of the sugar melts and slightly browned.

2. Pour water in and stir.

3. Add the soy sauce, dark soy sauce and sesame oil and stir. 

4. Cover and let it boil. 

5. Add in the chicken drumsticks.

6. Simmer on low heat for 12-15 mins.

7. Scoop out 2 spoonfuls of gravy using ladle and set aside to cook capsicum in another pot later. 

8. Continue to simmer the gravy with chicken for another 5-7 mins on high heat to thicken it. 

9. Off the stove and remove chicken, place them on a serving plate. 

10. Pour the thickened gravy into another bowl.

11. On medium heat, cook capsicum chunks using the 2 spoonfuls of gravy earlier, for 5 mins. 

12. Scoop out capsicum chunks and place it together with the chicken drumsticks. 

13. Scoop 2 tablespoons of thickened gravy and pour over the chicken, or more if desired. 

14. Sprinkle chopped spring onions on top and serve.
